The alchemy of turning flour and egg into sublime food is one of the beautiful processes in any caring kitchen. Properly prepared pasta is a truly satisfying dish and often surprising to people used to commercial standards. All pasta at Coast is hand made. However the love doesn’t stop there, because once the pasta hits the water it needs constant attention so that the cooking process produces pasta of texture and flavour.
Badly cooked pasta will sit clumsily on the plate without lustre and often taste slightly wet or floury. Dressing the pasta is a matter of equilibrium, balancing the quantity of the sauce to suit the form and texture of the pasta. Seasoning also needs a fine balance. A great pasta dish will hold lots of love.
